Great, flavorful lunch option. Make it the night before, then grab and go in the morning!
In a bowl, add diced ham, relish, black pepper, and mayonnaise. Stir well to combine.
Using a sterilized Mason jar, layer bottom with half the coarsely chopped arugula. Add several spoonfuls of ham salad. Add pineapple chunks. Repeat one more layer of each. Seal with a lid or cover with plastic wrap, and refrigerate until ready to serve. Or take to work in the morning, keeping it refrigerated until ready to eat.
