Dinner salad with Greek flavors of balsamic, oregano and feta.
Add all of the dressing ingredients into a bowl and whisk until combined. Or you can add the ingredients into a jar with a tight fitting lid (like a Ball canning jar) and shake vigorously until the dressing comes together.
Assemble your vegetables on 2 plates, top with the grilled chicken and the crumbled cheese and pour the dressing over it.

Hi Sari – Yup, plain old mustard but any kind you have in the house will be fine. It acts as an emulsifier for the dressing and gives a little extra tang.

Are you just using regular ol’ yellow mustard for the dressing?
