The combination of the dressing flavours and the grilled avocados is amazing!!!
Whisk Garlic, Lemon juice and a touch of salt together. Slowly whisk in the oil, then the chilies and Parmesan. Season to taste.
Preheat BBQ to HIGH.
Cut Avocados in half lengthwise, remove seed and cut each half again in half lengthwise. Brush with Olive Oil and sprinkle with salt. grill on each cut side until you get grill marks (don’t over cook).
When cool enough to handle use a spoon to scoop out each quarter from the peel. Cut each tomato into eight wedges. Arrange the tomato and avocados on a serving dish. Drizzle with dressing.
Add crispy bacon and roughly chopped Basil or Coriander.
Serve immediately!
