Sweet & Tingly side dish that is cool and refreshing. Best when eaten with a rich dish such as pinto beans and ham hocks and cornbread. The acidity of this little gem cuts the richness of the ham and beans.
Bring vinegar, water, sugar and spices to a boil in a medium sauce pan. Stir until sugar is dissolved.
Taste and determine if you need more sugar or vinegar. The sweet & sour level should match your taste.
Let cool to room temperature.
Slice and wash all vegetables. Thinly slice green tomatoes, cucumbers and onions. Place in resealable container.
Strain the vinegar mixture to remove most of the spices.
Pour vinegar mixture over vegetables. Refrigerate at least two hours before serving. Better the next day. Enjoy!
