Grandma’s Jello Salad

Description
This is a lime Jello salad that my grandmother made at every holiday and family get together. It tastes like home to me.
Ingredients
- 1 box (3 Oz.) Lime Jello Mix
- ¾ cups Pineapple Juice
- 1 can (8 Oz.) Crushed Pineapple
- 8 ounces, weight Cottage Cheese
- 12 whole Large Marshmallows, Chopped
- 1 cup Pecans, Chopped
- ½ pints Whipped Cream
Preparation
Mix the Jello mix into the pineapple juice and boil for two minutes. Set aside to cool.
Drain crushed pineapple and mix it with cottage cheese, marshmallows, and nuts.
When Jello has cooled, pour over cottage cheese mixture.
Beat the whipped cream into the mixture.
Pour into an 8 x 8 pan. Refrigerate until served.

I love this salad! My mom used to make it all the time too but she misplaced her recipe. Thanks for sharing!
