Description

A tangy gelatin salad with Coke and pineapple.
It’s red color makes it great as a Christmas, Valentine’s Day or 4th of July salad; but I make it anytime.

Ingredients

  • 1 can Dark Sweet Cherries, Pitted (15 Oz. Can, Drained But Reserve The Juice)
  • 1 box Cherry Flavored Gelatin Mix (3 Oz. Package)
  • ½ packages Cream Cheese, Softened (8 Oz. Package)
  • 1 can Crushed Pineapple, Drained (8 Oz Can)
  • ½ cups Chopped Pecans (or Walnuts)
  • ½ bottles Coca Cola (12 Oz Bottle) I Have Used Diet Coke

Preparation

When you drain the can of cherries, reserve the juice in a glass measuring cup. Add enough water to make 1 cup. Heat the mixture in the microwave until boiling. Put the cherry gelatin mix into a large bowl and add the boiling cherry juice. Stir to dissolve the gelatin. Add softened cream cheese and blend thoroughly (sometimes I use a hand mixer). Add drained pineapple, drained cherries, pecans and the Coke. Stir everything together really well, pour into a 6×10-inch Pyrex dish and chill. I sometimes freeze mine then take it out of the freezer 15 minutes before serving.
