The roasted asparagus is perfect with a fried egg on top of your morning toast.
Preheat oven to 400 F.
Place asparagus stalks on a heavy baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast until asparagus is tender, about 15 minutes. Remove from the oven and cool completely.
Cook the eggs the way you want them (fried or poached).
Spread about a teaspoon of Dijon mustard on each slice of toasted bread. Top with some of the asparagus and carefully place one egg on top.
Sprinkle with pepper. Serve and enjoy!
