Just because you are gluten-free doesn’t mean you can’t have a salad with bread croutons.
Heat a drizzle of olive oil in a frying pan over a medium heat. Fry pita squares until golden brown. Set aside to cool.
Make the dressing by whisking garlic, lemon juice, olive oil and parsley.
Place tomato, cucumber, pepper, onion and pita in a bowl. Stir in dressing and season with salt and pepper.
