This is a delicious, flavorful light salad that is perfect for a warm evening or brunch with girlfriends. Moist chicken, napa cabbage, a tangy dressing topped with peanuts make it so yummy. It has Asian flavors, but will appeal to a wide audience.
Combine lime juice, fish sauce, vinegar, sugar and pepper in a large bowl. Stir well to dissolve the sugar. Add sliced onions and toss to coat. Set aside to “marinate” for approximately 25 minutes.
Coarsely chop cabbage and mint. Add cabbage, mint, carrots and chicken to the bowl of marinated onions and toss to coat everything well. Mound salad on plate and top with peanuts. Serve immediately.
