A super quick and easy potato salad perfect for picnics!
1. Peel and cut potatoes into cubes.
2. Boil the potatoes in a pot of boiling salt water until tender, but do not overcook. For me, on high heat, this was about 7 or 8 minutes.
3. In the meantime, boil the eggs. The easiest way to do this is to place eggs in boiling water with a little bit of vinegar so not to burn the saucepan. Boil eggs for about 10 minutes. When done, remove the eggs from the water and run under cold water. Then peel the egg.
4. While eggs and potato are hot, combine the potato with the egg (diced into quarters) in a bowl and add the dressing. Mix well.
