I was once asked to bring a salad along to a braai. Faced with an empty pantry and it being the end of the month, I had to improvise. The only thing staring back at me from my empty cupboard was a bag of onions. This was the result, and I have been asked for the recipe over and over again.
Cut onion in rings and separate. Place in a bowl and pour boiling water over it. Let it rest for about 20 minutes, then drain.
Mix the rest of the ingredients and add to the onion rings. Let rest for 24 hours to develop flavor.

I made this for our family Christmas party and it was excellent. My 2 nieces and my sister-in-law all asked for the recipe. We had it with turkey and tonight we ate it on hot dogs. YUM!
