Description

One day I found some mashed strawberries in the freezer that were previously destined to be jam, but were forgotten. After thawing them I substituted them for the cold water in Jell-O and ended up making my favorite dessert!

Ingredients

  • 2 cups Boiling Water
  • 1 box (6-serving Size Box) Strawberry Jell-O
  • 2 cups Mashed/Pureed Strawberries (no Sugar Added)
  • ¾ tubs (8 Oz. Tub) Cool Whip, Or To Taste

Preparation

Bring water to a boil.

Pour Jell-O powder into a medium/medium-large bowl. Add water to the Jell-O powder and stir to combine until Jell-O is dissolved.

Add strawberries in place of cold water. Refrigerate for about 4 hours or until firm.

Using a whisk, start by adding half of the Cool Whip to your Jell-O, adding more to your taste. (I use about 3/4 of the container). Refrigerate until re-Jell-O-fied.

I took this to a church potluck and it was a hit. Everyone immediately recognized it as “Pink Salad.” Apparently an older lady used to make this for every potluck. It was tasty and EASY, similar to Orange Salad to me. Thanks for sharing.
