I am a cold salad nut. Potato, pasta, tuna or any kind. I made this salad for a picnic years ago and have not been allowed back without it since.
Heat a pot of water to boiling. Add your chopped potatoes and cook until they are tender. The cook time will depend on the size of cubes, but should take between 10-20 minutes. Drain off the water, put potatoes into a bowl and allow to cool to room temperature.
Add the rest of the ingredients and mix well. Taste for seasonings and adjust as needed. Refrigerate for a minimum of 4 hours before serving. Enjoy!
