My family’s favorite potato salad, featuring sour cream, red onions, and you guessed it, dill!
1. Wash the potatoes and then boil until fork tender in lightly salted water. Drain and let cool.
2. Chop red onion and set aside.
3. In a large bowl, mix together the sour cream and mayonnaise.
Dice the potatoes in to good size chunks. Since new potatoes are small, I usually just quarter them.
Gently fold the potatoes and the chopped onion in to the sour cream and mayo.
4. Stir in as much fresh or dried dill as you like. If using fresh, a little goes a long way! Season with salt and pepper to taste. Cover and chill before serving.
