Note: Preparation time does not include 30-minute refrigeration time.
Using a mandoline, slice peeled cucumber and set aside. In a mixing bowl, add Greek yogurt, lemon zest and juice. Stir to combine. Add black pepper, Greek oregano, and onion powder. Stir again to mix. Add sliced cucumber and gently toss.
Cover with plastic wrap and refrigerate at least 30 minutes (the longer the better). Gently toss or stir before serving.
