A delicious and healthy way to use up your garden cucumbers!
In a large bowl, toss the cucumber slices with the salt, stir well. Allow to sit for about 30 minutes to draw out some of the water in the cucumbers. Drain off the water. Add the red onions and fresh dill.
In a small saucepan, combine the vinegar, sugar, and water. Bring to a boil and let simmer for about 1 minute until the sugar has dissolved. Pour the dressing over the salad and stir to combine. Taste for seasoning and add salt and pepper.
Refrigerate for at least 30 minutes before serving.
