Description

A refreshing side to any bbq. Make double – you’ll need it.

Ingredients

  • 2 whole Cucumbers, Peeled And Sliced Thin
  • ¼ cups Cilantro, Roughly Chopped
  • 1/8 White Onion, Sliced Very Thin
  • ¼ cups Rice Vinegar
  • 1 Tablespoon Lime Juice
  • 3 Tablespoons Sugar
  • ½ teaspoons Salt
  • 1 Serrano Chili, Sliced Thin With Seeds Removed (optional)

Preparation

Prepare ingredients as listed above. If your cucumbers are small, use 3. Toss together and let sit for about 20 minutes before serving.

This was really good! I also used a sugar substitute like cookiej and also found that it kept for two days. It is really nice with grilled steak.

My family thought this was a fantastic side dish! I was confused about the size of the cucumber, so I used about 2 cups (3 really skinny and long cukes). I also decreased the sugar to 2 tablespoons because I’m a diabetic and well, that’s just what we do.
I was barely able to save some to see how it would turn out the 2nd day. I discovered it was still really good. Thanks for posting. One can never have too many great recipes to use up cucumbers =)
