Crunchy Radish and Arugula Salad
Description
This fresh and crunchy radish salad is peppery and a perfect quick lunch!
Ingredients
- 10 ounces, weight Radishes, Topped Tailed And Finely Chopped
- 1 ounce, weight Arugula Leaves
- 1 ounce, weight Spinach
- 6 ounces, weight Tomatoes, Cut Into Bite Size Pieces
- 1 Tablespoon Parsley, Finely Chopped
- 1 Tablespoon Grated Parmesan
- FOR THE DRESSING:
- 1 Tablespoon Olive Oil
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Red Wine Vinegar
- 1 Tablespoon Honey
- 1 teaspoon Cracked Black Pepper
Preparation
Place radish, arugula, spinach, tomatoes, parsley and Parmesan in a large bowl and toss.
In a jug, mix olive oil, lemon juice, red wine vinegar, honey and black pepper and drizzle over the salad.
