Description

An addictive twist on salad dressing that will have you wanting to pour it on everything!

Ingredients

  • 2 whole Large Yellow Or Red Heirloom Tomatoes
  • 3 Tablespoons Olive Oil, Divided
  • 1 clove Garlic, Peeled
  • 1 Tablespoon Chopped Chives
  • 2 Tablespoons Mayonnaise
  • ¼ cups Milk
  • ¼ teaspoons Sugar
  • 1 Tablespoon Red Wine Vinegar
  • Salt And Pepper, to taste

Preparation

Preheat the oven to 400 F.

Slice the tomatoes and place them on a rimmed baking sheet that you’ve lined with parchment paper. Drizzle one tablespoon of olive oil over them and roast in the oven for 25 – 30 minutes. Then remove them from the oven.

Place the garlic in a food processor and pulse until it’s chopped finely. Add the roasted tomatoes, the remaining 2 tablespoons of olive oil, chives, mayonnaise, milk, sugar and red wine vinegar. Puree until smooth then season with salt and pepper to taste. Add a bit more milk if you like a runnier consistency.

I rarely leave comments about things…but this recipe warrants it!! I found this last night…and made 2 batches today! It is the BEST dressing I think I have ever had!! I could eat it like soup!! Its delicious!!! Thank you for all the wonderful recipes!!!
