My sister made this for me the last time I visited her and I have made it twice already since I came home. It is my new favorite lunch along with a pumpernickel roll. It’s a perfectly refreshing salad for the dog days of summer.
Combine cucumbers and onions in a medium bowl.
In a small bowl stir together sour cream, mayonnaise, vinegar, sugar, salt and pepper.
Stir the sour cream mixture into the cucumbers and chill.

Delicious…my aunt has made this every summer since I was a kid, but she leaves out the seasonings and instead adds a package of ranch dressing mix. Yum!

I make one almost identical to this. It’s a family favorite!
A little cucumber tip: when using garden cucumbers, the juice in them can sometimes be bitter. To combat this, coat your cucumber slices with coarse salt and allow to sit for at least an hour. then rinse really well, drain and pat them dry on paper towel. This is especially handy when making your salad ahead for a potluck or such, as the longer it sits, the more the bitter juices are drawn out. But salting them draws it out before even making the salad.

An old family favorite! We make this one – minus the sour cream, sugar, & vinegar.. .and we always put in fresh tomatoes! I’ll have to try your version whenever the hubby isn’t eating any. He hates sour cream!

I have sooo many cucumbers growing in my garden and I love finding new ways to eat them. Can’t wait to try this one!
