Description

Tangy, sweet, crunchy and creamy, this unexpectedly perfect coleslaw pairs well with grilled or barbecued meats, hamburgers, and midnight snacks. What? You don’t eat coleslaw for midnight snacks? Well, you might now!

Pssst. You don’t have to tell anyone, but this is actually healthy. Greek yogurt replaces most of the mayonnaise, but keeps it creamy so you don’t miss a thing!

Ingredients

  • ½ cups Greek Yogurt
  • 1 Tablespoon Mayonnaise
  • 1 Tablespoon Honey
  • 1 Tablespoon Lemon Juice Or White Wine Vinegar
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Freshly Ground Pepper
  • ¼ teaspoons Celery Seeds
  • 1 pound Package Cabbage And Carrot Coleslaw Mix (or 6 Cups Mixed Shredded Cabbage And Carrots)
  • ¼ cups Plus 1 Tablespoon Dried Cranberries
  • 2 Tablespoons Plus 1 Teaspoon Shelled Sunflower Seeds Or Slivered Almonds

Preparation

Use a whisk to combine yogurt, mayonnaise, honey, lemon juice (or vinegar), salt, pepper, and celery seed to make the dressing. Set aside.

Add coleslaw vegetables to a mixing bowl. Toss in 1/4 cup of the cranberries and 2 tablespoons of the sunflower seeds. Pour the dressing over the slaw and toss to coat completely. Transfer to a serving dish and scatter reserved cranberries and sunflower seeds over the top.

Tried this coleslaw with ribs, and it was fantastic! I messed around with the portions a bit to get the dressing to taste exactly the way I like it, and it was awesome!

Loved this coleslaw! We were looking for something different to make with Salmon Wellington and this was perfect; especially since we thought about a side dish at the last minute!! It’s also one of those dishes thats better the next day. The only thing I may tweak is changing the ratio of greek yogurt vs. mayo next time.

This was a perfect burgers/dogs side, especially since one of us (& probably a couple of more if we’d admit it) has cholesterol/fat issues. Light and crunchy and a tad sweet. Would definitely call this “my” go-to coleslaw recipe. Thanks!
