Description

This chunky apple and cranberry relish is a great addition to your holiday dinner. It should be made days ahead of time to allow the flavors to come together.
Freeze portions to enjoy throughout the season.

Ingredients

  • 2 Tablespoons Water
  • 3 whole Large Fuji Or Gala Apples, Cored And Chopped
  • 4 bags Fresh/Frozen Cranberries, (12-oz. Each)
  • 1 teaspoon Cinnamon
  • 1 dash Black Pepper
  • 3 whole Navel Oranges, (zest 1 ½ Of Them & Juice All 3)
  • 1 Tablespoon Orange Liqueur
  • 3 teaspoons Fresh Lemon Juice
  • 2-½ cups Sugar
  • 3 teaspoons Fresh Ginger, Minced

Preparation

There are 2 ways to make this recipe.

For the easy method:
Add all of the ingredients into a large pot, put the lid on and cook on medium-high heat for about 20-30 minutes. If you want the fruit to be mushier, cook a little longer (10 minutes more).

For the moderate method:
In a large pot add 1 tablespoon of water, apples, cranberries, cinnamon, pepper, orange juice & orange liqeur. Set aside.

In a smaller saucepan, add lemon juice and sugar and cook over medium-low heat. You may need to add a little more of the water if it’s too dry. Cook until it begins to turn golden and caramelize. Next add the orange zest and ginger. Turn off the heat.

Pour the caramelized sugar mixture all over the cranberries and apples. Mix well, cover and cook over medium-high heat for 20-30 minutes. If you want the fruit to be mushier, cook a little longer (10 minutes).
