Couscous salad with raisins is such a refreshing and light dish. It doesn’t really require any energy or your precious time. If you have never tried couscous before, I recommend you try this dish—I guarantee it will make you a couscous lover.
Pour couscous into a bowl. Pour in boiling water, cover, and leave for 5 minutes. Couscous should absorb the water. After 5 minutes, uncover the bowl. Fluff couscous with a fork and let cool.
Add tomatoes, cucumber, onions, pepper, and raisins to couscous. Mix well.
Whisk olive oil with balsamic vinegar and pour into the salad. Add salt and pepper to taste and mix one more time.
Serve and enjoy!
