This fruity side dish with a little zing is the perfect complement to pork chops.
Saute onions and garlic in a small amount of olive oil for 1-2 minutes. Add water and bring to a boil. Stir dates, Craisins, raisins and peanuts into water and allow to return to a boil. Add couscous and cilantro, mix, cover, and let simmer over low heat, stirring occasionally, until nearly all the water is absorbed. While there is still a bit of water remaining, stir in mango, cover and keep simmering until all the water is absorbed and the couscous is tender. Serve!
