We all know cabbage is a healthy vegetable, but a lot of kids won’t touch it, even when raw. This coleslaw recipe should tempt your kids to eat it though! To make it easy, use the preshredded bagged coleslaw mix (you get a little carrot that way, always a good addition) if you wish. I do. If your kids like raisins, they also are a nice addition. This is also a fun recipe for any picnic or barbecue.
Drain the pineapple well, reserving juice (you need it for the dressing).
In a large bowl, place all the ingredients except the pineapple juice and mayo; stir well to combine.
In a small bowl or measuring cup, add a wee bit of pineapple juice to the mayo, just to thin it out a bit (to salad dressing consistency). Pour a small amount over cabbage mixture and toss; add more dressing as you see fit.
Refrigerate until serving.
