Cilantro Lime Coleslaw

Description
This coleslaw is simple, refreshing, and healthy! It’s also mayo-free, which makes it perfect for an outdoor summer BBQ or picnic.
Ingredients
- 1 whole Small Red Onion, Thinly Sliced
- ½ heads Purple Cabbage, Thinly Sliced
- ½ heads Cabbage - Thinly Sliced
- 1 cup Shredded Carrot
- 1 whole Jalapeño, Seeded And Diced Into Half Moons
- ½ cups Fresh Cilantro, Chopped
- 2 whole Limes, Juiced
- ¼ cups Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste
Preparation
Simply combine all of the ingredients in a large bowl. Toss everything together and you’re done! This coleslaw is best when served immediately. It goes great with burgers, on top of pulled pork sandwiches, with with ribs, hot dogs, or whatever other summer meals you’re enjoying.
