A big bowl full of Mexican flavors and spices, made with black beans, corn, chicken, sweet potatoes. Makes for a quick and healthy lunch or dinner.
In a microwave safe bowl add beans, corn and sweet potato and microwave for about 1 minute or until warmed.
In a bowl add the lettuce, tomatoes, chicken, black beans, corn and sweet potato. Top with salsa, Greek yogurt and chips.
