This is the best ever corn salad. It goes great alongside grilled burgers. It is my go-to recipe for cook-outs and family get togethers. I ALWAYS have to give out the recipe to several people.
Drain Mexicorn, add mayo to taste, garlic powder to taste, and lots of freshly shredded cheddar cheese. Refrigerate for one hour. Right before serving, stir in a bag of Chili Cheese Fritos. It is sooo good and everyone will love it, guaranteed!
Note: If you don’t have Mexicorn, just add 3 cans of corn and about a half a cup of green and red bell pepper.

I have made this with fresh corn and fresh bell peppers and added a little cilantro and it was yummy!
