Protein salads are very nutritious and full of flavor.
Our Chickpeas Salad with Cherry Tomatoes became our go-to salad last couple of days.
Prepare all the ingredients. We use jarred chickpeas, but if you have time you can cook your own chickpeas. Cup bell pepper and cherry tomatoes into bite-size pieces. Chop the red onion and parsley.
To make the dressing add all the dressing ingredients into a small bowl and mix them until combined. Set aside.
In a large bowl add all the salad ingredients. Pour dressing over it. Toss everything together until combined.
