This chicken and rice salad is a great summertime meal when served over salad greens or in a wrap. Using leftover grilled chicken adds extra flavor.
Whisk together the mayonnaise, milk and lemon juice. Set aside. Stir together chicken, rice, onion, grapes, almonds and water chestnuts. Pour dressing over everything and mix well. Salt and pepper to taste. You may serve this immediately but it actually tastes best when chilled for several hours or even overnight.
