Mix together chickpeas, tomatoes, red onion, cucumber, garlic, and green onions. Add in the lemon juice and olive oil. Season with the pepper and salt.
I’ve made this a few times and it is amazing. Simple, refreshing and a hit at summer parties. I sub out the roma tomato for quartered grape tomatoes instead only because I prefer them.
