Carrot Salad

Description
Crunchy carrot salad with raisins, cilantro, apples and peanuts.
Ingredients
- 3 Tablespoons Olive Oil
- 2 Tablespoons Apple Cider Vinegar
- ¼ teaspoons Cinnamon
- 1 teaspoon Sugar
- Salt And Pepper, to taste
- 4 whole Carrots, Grated
- 2 Tablespoons Cilantro, Chopped
- ¼ cups Raisins
- 1 whole Small Apple, Cored And Diced
- ¼ cups Peanuts, Chopped
- Nutmeg, Fresh Grating
Preparation
Whisk olive oil, vinegar, cinnamon, sugar, salt and pepper together. Set aside. Toss carrots with the cilantro, raisins and apple. Pour dressing over and toss to coat well. Top with peanuts and a fresh grating of nutmeg. So good!
