I love raw broccoli and this “slaw” is a delicious recipe that uses this terrific vegetable. This side dish is a wonderful addition to any summertime menu. The dressing is light and tasty and the bacon just sets it all off.
Cook bacon until brown and crisp. Drain on paper towels. Crumble into small pieces and set aside.
Cut florets from the broccoli stems. Put in a large bowl with the chopped onion and the raisins.
In a small bowl whisk together mayonnaise and vinegar until smooth. Add honey and salt and pepper, whisk to combine. Pour the dressing mixture over the broccoli and onion. Toss to coat. Crumble bacon over the slaw and serve immediately.
Serves 8.
