Description

Fresh broccoli, sweet grapes, crispy bacon and peanuts combine with a smooth, tangy dressing to make a special salad that’s perfect for summer parties.

Ingredients

  • 4 cups Coarsely Chopped Fresh Broccoli Florets
  • 2 cups Halved Red Seedless Grapes
  • 2 cups Halved Green Seedless Grapes
  • 4 whole Green Onions, Thinly Sliced
  • 6 strips Bacon, Cooked Crisp And Chopped
  • ¼ cups (rounded) Low Fat Or Regular Mayonnaise
  • ¼ cups (rounded) Low Fat Or Regular Plain Greek Yogurt
  • 2 Tablespoons Granulated Sugar
  • ½ Tablespoons Apple Cider Vinegar
  • 1 cup Lightly Salted Peanuts

Preparation

For the salad, combine the chopped broccoli, red grapes, green grapes, green onions and chopped bacon in a large bowl. Stir to mix.

For the dressing, in a medium bowl, combine the mayonnaise, Greek yogurt, sugar and cider vinegar. Whisk until combined and smooth.

Pour the dressing over the broccoli mixture and stir to coat. Cover with a sheet of plastic wrap and refrigerate several hours or overnight.

Just before serving, add the peanuts and toss to combine.

Recipe makes 6-8 servings.
