This healthy salad of black rice with spicy honey balsamic dressing is a perfect light brunch or light dinner. Loaded with fiber and healthy stuff, you can eat a lot of this and not feel guilty.
1. In a saute pan, add olive oil. Add the corn, garlic and saute for 1 minute on low heat.
2. Add the bell peppers, saute for a minute and add the cooked rice.
3. Heat through, turn of the heat and add the basil.
4. For the vinaigrette, add balsamic vinegar, orange juice, honey, hot sauce, olive oil, salt and pepper and mix it well.
5. Add the vinaigrette little by little until the desired taste is achieved. You can add more salt, but you cannot take it away, so please note, add salt a little at a time.
6. Top with pine nuts and egg if desired.
