15 minutes or less! The simplest of simple yet wonderfully delicious black bean and mango salad. Serve as a dinner salad or as a side dish. It is satisfying either way.
In a large bowl, mix beans, chopped onions, sliced scallions, peppers, mango, jalapeno, cilantro, and garlic. Toss.
Add olive oil, cumin, and salt. Toss again. Finish by squeezing the lime juice directly into the salad mix and toss well.
Taste for seasoning and adjust as needed. Transfer to a platter and serve.
