Black Bean and Avocado Salad

Description
You’ll be ready for summer with this salad of avocado, chickpeas, corn and black beans in a tangy dressing.
Ingredients
- 2 whole Avocado, Cubed
- 2 whole Tomatoes, Diced
- ½ whole Medium White Onion, Diced
- 1 can (15 Oz. Can) Chickpeas, Drained And Rinsed
- 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
- 1 can (11 Oz. Can) Shoepeg Corn, Drained
- ¼ cups Red Wine Vinegar
- 1 Tablespoon Rice Wine Vinegar
- 1 teaspoon Lemon Juice
- 1 teaspoon Lime Juice
- 2 teaspoons Garlic Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preparation
Mix everything in a large bowl.
That’s it!
Goes great in a salad, taco or over rice.
