Description

Celebrate summer solstice with heirloom tomatoes and the flavors of basil and cilantro in a tangy vinaigrette! There’s just nothing like having fresh produce while it’s actually in season!

Ingredients

  • ¼ cups Red Wine Vinegar
  • ¾ cups Extra Virgin Olive Oil - Light
  • 1 clove Minced Garlic
  • 1 Tablespoon Dijon Mustard
  • 3 Tablespoons Freshly Chopped Basil
  • ½ Tablespoons Freshly Chopped Cilantro
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 4 cups Heirloom Tomatoes

Preparation

Helpful tools: Cruet (or jar with a tight lid so you can shake the dressing)

1. Mix everything (except tomatoes) together in a jar with a lid that goes on tight.
2. Shake well.
3. Pour desired amount over tomatoes.

I miss my old garden where I grew these tomatoes, but the farmer’s market in so cal never disappoints. This recipe is yummy!!!!
