Description

I found this recipe in our local newspaper. It was submitted by a local deli in response to a reader request for it. It’s probably the best salad of this type I’ve ever tried! And if you substitute Splenda for the sugar, it’s also low carb!

Ingredients

  • 3 heads Fresh Broccoli
  • 1 whole Small Cauliflower
  • ½ whole Small Onion (or To Taste)
  • ¼ cups Crumbled Crispy Bacon (I Add More - We're Bacon Addicts At Our House!)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Sugar (I Use Splenda)
  • 2 cups Mayonnaise
  • 4 Tablespoons White Vinegar (I Use Rice Wine Vinegar Because It's Milder)
  • ½ teaspoons Salt, Or To Taste
  • ½ teaspoons Fresh Ground Black Pepper, Or To Taste

Preparation

In a large bowl, combine broccoli and cauliflower. Add onion and mix well. Add cheese and bacon.

In small bowl, combine remaining ingredients to make the dressing. Whisk well so there are no lumps. Pour over prepared vegetables and mix until vegetables are evenly coated. Chill prior to serving.
