A refreshing summer dish, great as a side dish, or eaten for its own sake.
Dice avocados and tomatos, and add to a bowl. Sprinkle with blue cheese crumbles, and then drizzle with olive oil and vinegar. Top with crumbled bacon, then toss just before serving. This is a summer staple at our house, and it’s also delicious piled on top of a burger.

This is very good. We added a carton of Grape tomatoes, in place of chopped tomatoes, some romaine hearts . Little more dressing. Sounds great ,as your exact recipe ,for the burger topping.
