See my recipe box for Burrito Bowl meal. Serve this dressing with burrito bowls or tacos.
Peel avocados, remove pits, and scoop out flesh. Hopefully it is the perfect day and your avocados are well-ripened but not brown inside. Puree all the ingredients until very smooth. I use my immersion blender for this. Add enough water to make the dressing pourable. It will get runnier the longer it sits. The dressing doesn’t keep well in the fridge, only up to 3 days.
This dressing is good served over a burrito bowl mea, over beef, chicken, or fish tacos, over taco salad or garden salad.
Mix this recipe (or half a recipe) together with your favorite ranch dressing for a tasty salad dressing similar to Chick-fil-A’s Avocado-Lime-Ranch dressing.
