Cheese, tomatoes and asparagus! The perfect ingredients for a summer salad. It’s a little twist on a classic.
Remove the woody stems of the asparagus by snapping them off. Chop each stalk into 3 or 4 pieces until you have around 2 cups of asparagus. Steam the asparagus for 3-5 minutes using any method you wish.
Heat the olive oil in a pan and saute the garlic in the oil for 1 minute. Add the tomatoes to the pan and saute them for 2 minutes.
Pour the tomatoes and the garlic into a large bowl. Add the steamed asparagus, parsley, cheese and vinegar. Stir everything together.
