Flavorful and super quick to prepare! This is a great lunch option.
In a small bowl add reserved pineapple juice and Greek yogurt and stir to combine.
In a large mixing bowl add the drained crushed pineapple, apple sticks, shredded coleslaw veggies, lemon juice and lemon zest. Stir with a spatula to combine. Add yogurt mixture to bowl and stir well. Cover with plastic wrap and refrigerate 1 hour before serving.
When ready to serve add the shredded cheese and walnuts and stir again. Serve in individual bowls or plates and enjoy! This is so refreshing!
