Description

A delicious light dinner or lunch, packed with vegetables and bacon. Super easy to prepare. Best served with home fries/oven fries, salad and drizzled with Thai sweet chilli sauce.

Ingredients

  • 2 whole Zucchini, Grated
  • 1 whole Sweet Potato (Yam), Peeled And Grated
  • 1 whole Onion, Chopped Fine
  • 4 pieces Raw Bacon, Chopped
  • ½ cups Cheese, Grated
  • 6 whole Eggs
  • 1 cup Flour
  • ⅛ cups Vegetable Oil
  • Salt And Pepper

Preparation

Preheat oven to 350 degrees.

Mix all ingredients together in a large mixing bowl. Spoon into a greased baking dish for and bake 45 minutes or until set. It’s better to use a smaller baking dish so your zucchini slice is thicker. I use a small rectangular dish (the next one down from the 9 x 13 pyrex).

Serve with salad, oven fries/home fries and sweet chilli sauce. I’m telling you, the chilli sauce makes this dish.

Have made this several times. Love it! Only thing I did different was add extra cheese on top.

I made this recipe when I had family visiting this weekend and everyone loved it. The only thing I would change is to use less eggs (maybe only 4) because it was really more of a egg dish than I thought it would be. I did serve the leftovers for breakfast the next day though!

Yum! What a great and simple dish. The sweet potato added a wonderful flavor that I didn’t expect. I used uncured applewood-smoked bacon – it was excellent.
