Description

Quick and simple casserole with zucchini and blue cheese.

Ingredients

  • 3-½ cups Macaroni
  • 1 whole Yellow Onion
  • 3 cups Thinly Sliced Zucchini
  • Olive Oil
  • 3-⅝ ounces, weight (1/2 Cup) Blue Cheese
  • 1 cup Cream
  • Salt
  • Black Pepper
  • 1 cup Grated Cheese

Preparation

Preheat oven to 450 degrees.

Prepare the macaroni according to package instructions. Drain it and place in a 7×11 pan.

While the pasta’s cooking, slice the onion thinly and brown it slightly in olive oil together with the sliced zucchini.

Combine with the macaroni, crumbled blue cheese, cream, salt and pepper. Top with the grated cheese and bake in the oven until golden brown, about 15 minutes.

Use a blue cheese that you like, I like to use one that is creamy and rich in taste but not to sharp.
