Description

Really simple vegetarian dish I came up with one night. Now it’s a regular dish.

Ingredients

  • 16 ounces, weight Penne Or Desired Pasta
  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Minced
  • 1 whole Medium Yellow Onion, Diced
  • 3 whole Zucchini, Cut Into 1/2 Inch Pieces
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 8 ounces, weight Feta

Preparation

Boil pasta as directed on the box.

Heat olive oil in a large skillet over medium heat. Add minced garlic and diced onion and cook till onions are soft. Add zucchini. Cook until soft. Like potatoes, you can poke them with a fork and if it goes in easily, they’re done. Add diced tomatoes and season as desired.

Mix pasta in with the sauce and veggies. Crumble feta over the pasta in the pan or let your crowd do it themselves.
