Description

Zucchini Absorption Pasta: a yummy, no boil method for making yummy pasta.

Ingredients

  • ¼ cups Toasted Pine Nuts
  • 4 teaspoons Extra Virgin Olive Oil
  • 6 cloves Garlic, Minced
  • 1 pound Penne Pasta
  • 6 cups Chicken Stock
  • 4 whole Small Zucchini, Cut Into Thin Sticks
  • 2 teaspoons Salt And Pepper, Or To Taste
  • ½ cups Grated Parmesan

Preparation

Toast the pine nuts in a dry pan. Set aside. Heat the oil in a very large pan or Dutch oven. Add the garlic and cook until fragrant. Then add the pasta and stir continuously for 2 minutes. Add just enough stock to cover the pasta and lower the heat to medium-low. Cover and simmer for 10 minutes, stirring from time to time. Five minutes into the cooking, add the zucchini, and sprinkle with salt and pepper. Taste the pasta; if it isn’t quite done and all the liquids have been absorbed, add a little more stock or water, cover, and cook for a few more minutes before tasting again. Adjust the seasoning. Toss pasta with the pine nuts and parmesan.

Hi Aims: you’re definitely going to want to use dried pasta for this dish. After adding the stock, make sure to bring it to a boil, then cover it, reduce the heat, and make sure it remains simmering. The pasta should cook in 15 minutes or so.

This was fantastic and so easy to make! The pasta cooked perfectly al dente. It was a light dish, but very filling. Loved the toasted pine nuts. I’ll definitely make this again.

A good, simple dish, but pasta took about 40 minutes to cook so zucchini was pretty well destroyed. Still tasted good.

My husband, who sneered at the idea of zucchini in pasta, had seconds and thirds! Even our baby girl gobbled it up! :)

delicious! b/c the pasta cooks in the chicken broth, it has a lot of flavor!! i wasn’t sure if the olive oil was for 4 tsp or 4 tbs (blog post states 4tbs)…i used more rather than less. the only other change i made was to use chopped walnuts rather than pine nuts since that’s what i had on hand. i couldn’t stop eating it!
