Description

All the deliciousness of fried shrimp without all the fat. This is a much healthier, tastier alternative. Make sure to serve with an array of delicious homemade tartar and cocktail sauces!

Ingredients

  • 1 cup Whole Wheat Bread Crumbs
  • ½ cups Panko Bread Crumbs
  • ½ cups Parmesan Cheese, Grated
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Pepper
  • 2 whole Eggs
  • ½ cups Nonfat Greek Yogurt
  • 1 Tablespoon Hot Sauce
  • 1 Tablespoon Dijon Mustard
  • 1 pound Shrimp, De-veined And Peeled

Preparation

Preheat oven to 450ºF. Line a rimmed baking sheet with foil and top with a cooling rack. Set aside.

In one bowl, combine bread crumbs, panko bread crumbs, Parmesan cheese, and all spices. Set aside.

In a second bowl, combine egg, yogurt, hot sauce, and Dijon mustard.

Take shrimp, dip them into egg mixture first, then coat well with the bread crumb mixture. Place on a cooling rack and give it a spray with olive oil cooking spray (this will help them crisp up well).

Bake for 4 minutes on the first side. Flip, spray with olive oil spray, and bake an additional 4 minutes on the other side. Turn on the broiler and broil for 2 minutes to get them extra crispy and yummy.

Enjoy with homemade cocktail sauce!
