Weeknight dinners can be a monumental task for families on the run. Late meetings at work, sporting events, or last minute shopping trips, there are tons are reasons not to have a homemade meal. But savvy cooks know the slow cooker can be a home cook’s best friend. This recipe is a spin on the traditional Philly Cheese Steak Sandwich. By using chicken breasts, the meal is instantly lightened.
1. Layer the bottom of the slow cooker crock with butter, onions, peppers, and chicken. Sprinkle the top with the seasonings. Cover and cook on low for 6-8 hours.
2. Thirty minutes prior to serving, simply shred the chicken with 2 forks and allow to soak in the juices.
3. Slice the rolls in half and toast in the oven using the broiler. Place chicken filling onto the roll, allowing some of the juices to drain off (otherwise you get a really soggy sandwich). Top with cheese.
4. Place back under the broiler for 30-60 seconds, watching closely, to melt the cheese.
5. Serve with plenty of napkins. Enjoy!
