Description

Easy and delicous, with simple ingredients. Goes excellent with chicken or pork chops.

Ingredients

  • 3 whole Carrots, Sliced
  • 1 whole Onion, Sliced
  • 1 whole Green Pepper, Seeded And Sliced (optional)
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • ½ packages (16 Oz. Package) Fettucine
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 3 cloves Garlic, Minced
  • 4 Tablespoons Parmesan, Grated

Preparation

Slice carrots, onions and optional pepper. Melt butter over medium heat and mix in olive oil. Saute the carrots for a few minutes alone, until they just begin to soften. Then add the onion and pepper (if using), saute covered for 5-10 minutes until soft, stirring occassionally. Don’t saute them too long, as you don’t want the carrots to get soggy.

While the veggies are cooking, cook the fettucine noodles according to package directions until al dente. Strain and set aside, keeping warm.

When the veggies are almost done, mix in the salt, pepper, oregano, basil and garlic. Saute for a minute or so longer, and test for seasoning. I like lots of flavor. When they are done, mix them in with the noodles and sprinkle the parmesan cheese on top.

The veggies are also very yummy minus the noodles as a side dish.
